My older dog, Tahoe, was diagnosed with pancreatitis a long time ago. I simply put him on Dr. Hill's ID food and occassionally I would find a "easily digestible" dog food at Petsmart. I think it was Science Diet. This worked for him for several years. Just be cautious of the "crude fat" content in dog treats. Try to keep it down.

Anyway, I had him on that prescribed food for 4 years and then he began vomiting alot and was very lethargic. My new vet put him on IVD (Venison or Duck), suggesting that he had formed an allergy to chicken/beef and suddenly, at 15, he had the energy of a 10 year old. Worked for him! Not sure if it's related to the pancreatitis diagnosis or something altogether different.
