If you both like pork, we did this last weekend and it was amazing
Butterfly a pork tenderloin, rub both sides with a mixture of chopped fresh sage, rosemary, garlic and fresh lemon zest. Roll, wrap with proscuitto, tie. Cook in saute pan with oil to lightly brown all sides then transfer to a roasting pan, surround with fresh onion and bake. Oh my was this good!
We served with brussels sprouts mixed with roasted pecans. Perfect fall dinner and very flavorful!
