the vet really cannot help as this is food elimination trial and error there is no test for this disease but scoping and i would never do that as there are risks in doing that and not necessary

our internal medicine specialist said dogs with ibd tend to test high on amylase and lipase and on the spec cpli with no symptoms of pancreatitis at the time testing high so that would be only indicator on blood work but i would not put your dog through that.
are you sure no blockage ?
