I don't have much by way of advice for the poo eating, but there's a couple things you could try for the sneak indoor pooing. First, just never let her dart off into the house after a walk. Keep her on the leash with you while you're in the house. It's a pain, but at least she'll be constantly in your sight, and you can startle and stop her the second she starts to hunch up into the poo stance, and immediately carry her outside to do (or finish) the deed. We had to do the indoor leash thing with Nikko for at least a couple weeks until he decided that pooing outside was the way to go.

Also, Baylee might be seeing the walk as a fun exploration time, and not as potty/poo time. From what I've read and experienced, it seems to be best to have a small designated outdoor area for the bathroom (we used a specific corner of the yard). When you two are in that area, it's all about business - no patience for playtime. So maybe when you get back from your walk and she's had the opportunity to get a quick drink, you could take her to the designated poo area to focus on poo time.

Anyways, that's just a couple thoughts. Everybody ends up finding their own specific little tips and tricks to eventually make it work. Hopefully you'll get some other advice from other folks as well.
