Most Nikon and Canon cameras are good what you need to remember is that these are the brands which the profesionals use so they can afford to develop new ideas and then filter the technology down to us mere mortals
As for not being able to use the screen to see the pic first I'm not sure why you would want to unless you are using a tripod for all your shots the idea of any SLR either film or digital is that you can see the picture live through the lense and then decide when you take the shot.
