I normally will take a check as deposit and ask for cash when picked up.
If they want to pay the remainer by check the check must clear before they can take possession of the pup.

I know of a story where a lady bought 2 pom pups.
She called the breeder a few days later and told her one would NOT play and the other would NOT eat.
She brought the pups back along with her 3 small kids
(that she failed to tell the breeder she had).
The breeder told her the pups would have to be Vet check before she would refund any money to her.
The lady told her she had some shopping to do and would be back later that day.
The breeder took the pups to her Vet.
One of the pups had a broken jaw Vet said the pup was kicked hard enough in the face to break it little jaw and she had to have it put down.
The other was so dehydrated and worn out from over play.

The lady showed back up thinking she was going to get a refund.
The breeder told her she was NOT getting a refund.

The lady said where is the pups and the breeder said one is resting because it is exhausted from being played with like a toy and the other is there on the table dead that had to be put down because of your kids kicking it in the jaw.
The woman got all pissy because her kid were crying when they saw the dead pup.
The breeder told her she wasn't getting the other pup either.
Told her to get out of her house and never show her face around her again.

I don't know if anything came after this but I don't think this lady would have won in a court after what she let her brat kids do to those poor little pups.
How could the breeder not know this woman had 3 little kids...Having done placement for rescue I always made sure I listened to background noises and I also did home visits. I have always been surprised breeders don't do home visits to see where their little ones are going.
