There are three ways it can be done:
1. paired blood samples around a meal sent to lab
2. blood draw and test ran in-house
3. urine
I would only consider number 1. It is the most accurate. If you are concerned and he has never had a blood panel, he should have one.
In most cases it is best to let the vet give their own food because some like to do it with food that is high in protein and/or fat.
