Default Supplementing a home cooked diet

I am venturing into the realm of home cooking for my boys. I've read a ton (here and elsewhere) on supplementing and vitamins, etc. But I was wondering, if you're feeding a wide and balanced variety of foods that includes a consistent rotation of meats, vegetables, and carbs, why would you need supplements - doesn't the food supply the necessary nutrients for a dog the way it does for a human?

I have them taking a daily multi-vitamin and a glucosamine/chondroitin (sp?) supplement, and fish oil. I'm not opposed to it, I'm just torn on the necessity of "food supplement" to mix in.
