Congratulations! Your breeder sounds terrific. I love the ones who place a premium on socialization.
I just finished going through a similar experience, introducing a female puppy to a 5-year-old male who has ruled the roost and had alpha issues with other dogs in the house.
I'm no expert, but I can tell you a few of the things that seemed to work for us. My first suggestion would have been to have the initial meeting on neutral ground, but I think meeting at the breeder's house will work just as well.
What I found was the well-socialized puppy was too pushy for Eddie. She had never had a bad experience with another dog, so she got right in his face and wanted to play, play, play. Eddie didn't like that and he attacked her a couple times at first, fortunately causing no damage.
I decided to intervene when I thought she was getting too pushy. I showed Eddie that he didn't have to admonish her for her pushiness. I would protect him. That really seemed to work well, and I continue doing that to this day. She's almost 6 months. Now he loves playing with her.
I think you have to let them have a little rein to work things out themselves. The puppy has to learn the signals from the other dog that say "leave me alone right now." While Eddie's attacks were unfortunate, she got over them quickly and learned to be more cautious with Eddie and other dogs. She's now an excellent judge of character.
Another thing I did was set up an X-pen for her in the house so she could have a safe place to go to and to give Eddie some peace. It's worked out well and helped with potty training too.
