I just got a Canon XT too! LOL. I'm LOVING it but Jackson closed his eyes the first few pics I took, too lol. I think he just got used to it because now he doesn't do it as much. Outdoor shots are no problem, but inside if the room is darker, he will blink/close his eyes. Here was my very first shot with my Canon lol. I have no advice really - he just stopped doing it.
I still have not barely taken my camera off auto mode, I desperately need some help!
