You probably have the pre-flash on, it emits a small flash before the actual flash, this is sometimes called red-eye reduction. There should be an option for you to turn that off and use standard flash. I'm not real familiar with Canons (I use Nikon) but you might also be able to turn the sounds off on the camera (shutter sounds and beeps) through the menu.
