You need a good set of pumpkin carving tools, shaving the skin off in a pattern like that is always hard. It helps if you print two, use one to draw the pattern on the pumpkin, and shade in the areas that get cut out. After your cutting is done, then you shave the skin. Use the second one as a guide, so you can see if its turning out right.
