May work the same way as cheddar cheese does and gum containing xylitol, neutralizing the acid in the plaque. I know of nothing that breaks down human plaque and dissolves it only neutralizes it. If there was something that could remove human plaque, it would be the next huge health breakthrough. I'd be very skeptical of something claiming to remove it.
