I am a big believer of spay/neuter of pets and can quote all sorts of reasons to spay/neuter your pet but your question made me go out and try to see what % of animals die while under and could not find any data for this. I found the comment "small risk" time and time again which made me start thinking about human surgeries. There is not a person alive that goes into surgery without the same warning..it is a risk. I think the question you can ask your self is "would I skip surgery because of the risk if it helped me live longer?". I don't know if this helps you feel more comfortable or not but during my time in rescue we spayed/neutered close to 30 Yorkies and never lost one. I can only remember one dying here on YT and if I remember correctly that puppy did not have bloodwork done before the surgery which I believe is very important. Good Luck with your decision.
