Mucus is a sign of something going on/some irritation - but since it's there during a food change, I wouldn't worry about it too much, especially if the poo is formed.

Oh, and also - sometimes you'll see mucus at the *end* of a poo, and that's usually the anal glands performing a normal emptying, which is good.
