Although I agree with horse and hound AND BY THE WAY, WELCOMETO YT!!!)that sometimes poop and wood eating is a warning that something is missing in the diet, I have come to the goofy conclusion with both my horses and dogs that some of them just like the taste of wood.
A good long walk sounds like a good stress releiver for BOTH you and Sam. And a variety of safe chew toys might help deter him from chewing the woodwork. If you are find wood chips in his stool, please check his mouth regularly, they can get splinters in their gums which cause infections.
