Default Eggs in Yorkie Diet

We have been feeding Douglas a scrambled egg cooked in a little virgin olive oil for his dry skin. He loves it and can't wait for the egg to be cooked and cooled. The question is this - what would be considered a healthy regimen if scrambling one egg? Once a week? Three times a week? Is every day too much egg? Of course that's not all he gets. We also feed him flint river ranch lamb, rice and millet as well as the trout and potato kibble (about one-third of a cup daily.)
