I've used my poultry shears to cut my bully sticks in half (I like that my finger can be far far away from danger) or just the average serrated knife (mine is just a 5 1/2 inch one from kitchen aid.) It takes me a minute or two with the shears (getting through a little at a time.) I think you could use almost any knife, but the serrated edge really helps for me when I am doing it that way.

I don't have an dedicated knife/shear either... I just throw mine in the dishwater and call it a day.
