I think it's important to remember that definitions use in the dog food world are very broad (like there can be feathers in the food if they slip by in good processing practices). Who decides what "good" is?
Then it could be debated that by-products aren't a bad thing at all. Sure, it sounds horrible to us, but are the animal ingredients in "holistic" food nutritionally better for a dog? Nope, probably not. While I prefer not to feed by-products because the thought is gross, I can't say it is wrong to do so.
While I used to be into the holistic food thing (and still am to an extent), it seems that their products can be just as questionable as every other company. For instance, the nice pictures of vegetables that go into "premium" foods. What are the chances that veggies that look like that are being used? Almost zero. If they were that good, humans would get them.
You don't know unless you make it yourself and even then we still don't know because everything has been through some type of processing.
