I used a free program from Audacity, that does quite a bit, you can edit songs, and slow and speed them up, as well as record. It really is highly recommended, and unless you want to do some pretty fancy editing thats all you need.Audacity: Download

I recently paid for another program that was around $80.00, and the major difference was it allowed me to make mp3's off of music that I had recorded from TV, for example I can take a video file and turn it into a music file. The good news is that if you can figure out how to use Audacity, you can also figure out how to do Wave Pad, but this is probably much more than you need. Can't answer your questions about i-tunes.

This site says audicity can be used with i-tunes. http://www.bellaonline.com/articles/art14678.asp
