I haven't read all the posts, but I wanted to say something... I have a rescue yorkie that came to me and although he wouldn't try and eat his way out of the crate, he did have severe diarrhea in it everytime we'd leave him. I couldn't even baby gate him in the bathroom alone and walk 10 feet to my bed to go to sleep without him crying and getting diarrhea. We figured out that he didn't like to feel isolated - even if we were in the same room. I know it's impossible to be with him ALL the time, so we tried letting him free roam our master bedroom with our other yorkie and bada bing bada boom, he stopped getting sick. Now he is either with Chip (other yorkie) or if we have to take Chip somewhere, I do make sure someone is with him to avoid him freaking out. Could this be a possibility? Trying to keep him company with someone, whether it be dog or human? I agree with some of the posts that I did read too, you should consult a trainer. This sounds like an issue that a GOOD trainer could help with. This behavior is NOT normal and needs to be addressed while he's still relatively young.
