Default Question about bedding in crate and eating

Hi all,
I have a 15 week old puppy that I have had for about 2 weeks now. He is doing pretty well with his crate and house training. I had to take his bedding out of the crate because he would pee and poop in the bedding. He has not had any accidents in the crate since I removed his bedding. How long before I can reintroduce bedding to his crate. I would like for him to have something soft to sleep on.
Also, he won't eat unless I sit with him by his food. I think he is afraid that I will leave him. I would like to be able to enclose him someway so that he will eat without my having to babysit him. I have tried enclosing him with a baby gate in the laundry room but he gets very upset and climbs the gate. I don't want to have to close the door to the laundry room because he gets frantic and seems to panic. I have got to figure something out before school starts because I won't have the time to sit with him in the mornings anymore. Does anyone have any solutions for feedings in the a.m. I have considered feeding him in his crate but I don't thing there is room. Any ideas would be appreciated.
