just start tapering the dose down every few days and see how she does. If you notice that she is limping, favoring a leg, her knee feels looser then before, etc, then you need to bump it back up slightly for a few days and see how she does.
You need to know what signs she has of discomfort and adjust the dose according to that. What was she doing that made you put her on cosequin? If she's stopped doing that since she's been on the cosequin then start lowering her dose until she starts that action again. then bump it up a little so that she stops the action.
