I have a 6 year old, 4 year old, and 18 month old and no rescue was willing to adopt to me either. My breeder did not disqualify me because of having children. I assured her that my children have had small dogs their whole lives and that they know how to treat them (which they do). I think you are correct about not wanting to adopt out adult dogs to families with children because of agression. We had a s**tzu named coco who came from a family with rough children. When we got coco he was good with our kids for a week but then kept growling or trying to bite them whenever they walked into the room. My kids were never rough with him but I think that because he had grown up in a rough home he was nervous around children. If we had gotten him as a puppy we probably would not have had that problem.
