While her stress level is important, that's not what I'd even be very concerned about. If they leave the IV in, nobody is there to watch it or make sure she doesn't somehow pull it out. If they take it out she gets no fluids all night unless they leave or water. When eating or drinking after surgery though, they can get nauseous and throw up, so that may or may not do any good.
If she reacts to the pain meds (which they should be giving), who is there to help her?
Her incision should be okay but I wouldn't want to leave her alone just a few hours after surgery.
It is just not a good idea to leave an animal unsupervised after surgery.
You could go a few towns over and have a vet do it that has staff 24/7 and just go get her the next day. Or you could just tell your vet you will be taking her home that night. There is risk to it but there is risk leaving her too.
