I use Dr. Remillard out of Angell if that helps any.

It sounds like he is fine as long as he is on his own food and he doesn't get worked up, so switching foods may not do any good.

If you do want to try and switch, there are some good IBD diets available.
On that may work is Natural Balance Duck and Potato.
Purina HA is a very unique, soy based food that Ellie is on currently.
It isn't working for us but does seem to have potential.
We will be going to Z/D Ultra now.
If we can't find a food to work, the next step is intestinal biopsy.

So your vet is saying it's IBD?
Have they given you Metronidazole or Tylan to try?
Has a fecal for giardia been done?
Is the blood work normal?
