The blue eye condition is different that the colored tapedum and coat types you are referring to. This link explains eye shine and coat types.
Eye Shine
I think the blue eye condition is sometimes referred to cloudy eye, it can signify many things, cataracts, and can even lead to blindness. There is also something known as canine hepatitis that can cause blue eye, but if treated early enough the eyes will clear. Here's a link with more information. I think I would speak to the vet about it, and also my own vet before I made the commitment.
