I just taught this to Sophie. What I did was while she is sitting, I would have the treat in my hand and say "paw" while touching the top of her paw. After several days of doing this she finally picked up her paw to get it out from under my finger. I quickly praised her "good girl" and gave her the treat. Then I would do it 10 more times!!! I used the word 'shake' at first too, with no reaction. When I switched to "paw", she seemed to understand that better as I've used that word before when rubbing her paws or cleaning them after being outside in wet grass, etc. It was a familiar word to her.
