Best of Opposite Sex (BOS) just means that dog was the best out of all those entered that were the opposite sex of what the best of breed dog was. In most cases you don't gain any extra points for BOS but in some cases you could. Best of winners (BW) means they were the best out of all the class dogs and class bitches. So as for which is best, it totally depends on each show and what the entries are. In the case you described where the winners dog (WD) got three points and BOS and the winners bitch (WB) got 1 point then got BW, then in that case the BW was definitely a better win because she picked up 3 points by beating the WD.
