I'm not sure if you guys have Blick Art supplies stores around PA, but you can buy individual mat boards. They also have this: hhttp://www.dickblick.com/categories/matting/ where you don't have to get near the blade.

Also Aaron Brothers has prefab mats that can be bought individually, you just wont have the flexibility of a different crop.
