Regarding the diet what does your vet suggest? If it's really difficult for him to eat dry kibble id give moist high quality doggie food. Since you are concerned about the well being of his teeth maybe take him in often to the vet for cleanings and checkups??
I think him shaking is he is just sooo nervous and not trusting yet of his surroundings. Patience and a lots of love should bring him around.
