You should have food and water available to the kitty at all times. Is she eating solid food? If she is you will definitely want to make sure she's eating kitten chow because cats need taurine and cat food has it added. If she's having trouble eating solid food you can just soften it with water or give canned cat food.
The cat may not poop without a litter box. Most cats won't poop unless they have some way to bury their feces.
What you've given her so far for comfort sounds great! My kitties just love to snuggle in a blanket but oddly enough also enjoying sleeping on their backs on the hard wood floors.
