His hair seem to go from white to beige overnight, and it continues to get darker all the time.

My little Lillie looks just like your little Joey...although Lillie is a little lighter than your little guy...the pic of her in my avatar is when she was about 9 months old...she lightened up quite a bit. he is adorable!
