tortilla soup!!
all you need is:
cook whole chicken breast in a skillet (i use the same pot im going to be using for the soup) with olive oil. seasoned with cumin, pepper, and cayanne pepper. when its done cooking all the way through, take out the pot and set to the side to cool.
add chopped onion and bell peppers (green and red) and sautee until soft. add garlic (or garlic powder), more cayanne if you like it spicy like me, two 14.5ou of chicken broth, canned corn, canned green beans, fresh lemon juice, a cup of chunky salsa, green onions and chili powder.
while this is all heating up, you can shred the cooled chicken and add..
serve with lots of grated cheese, sour cream, cilantro, and crumbled tortilla chips
in like 30 mins youll have a really yummy dinner!
