Baked Potato Soup
Ingredients
2 1/2 lbs baking potatoes
2 1/2 lbs baking potatoes
1/4 cup all-purpose flour
1/4 cup all-purpose flour
6 cups 2% reduced-fat milk
1 cup reduced-fat shredded extrasharp cheddar cheese divided
1 teaspoon salt
1/2 teaspoon black pepper
1 cup reduced-fat sour cream
3/4 cup green onions chopped
6 slices veggie bacon
Instructions
Bake potatoes, discard skin, coursly chop
In pot add fluor, gradually add milk, cook over med till thick and bubbly, aprox. 20 min
Add potatoes, cheese, salt and pepper
Stir in sour cream and 1/2 of onions
Cook till heated through
Serve toped with veggie bacon and remaining green onions
Green Minestrone
1 Onion chopped
2 ribs Celery diced
2 cloves Garlic minced
1 c Zucchini chopped
1 Bay leaf
1 can (12 oz) White beans
8 c Vegetable broth
1 c Ditalini
1/2 lb Green Beans
10 oz Spinach
12 Basil leaves shredded
Instructions
saute onion, celery, garlic, zuchini, bay, salt and pepper
Add broth, bring to a boil, add beans and pasta and green beans, bring to a boil, 8 min.
Stir in basil. I like to top with a little pesto.
