Default Anybody ever incubated eggs before?

I'm looking to buy a R-com incubator for Easter. Its not technically for the kids as I'll have to do all the work but I know they'll love watching the eggs hatch and the birds grow! We don't have a large garden and won't be able to keep the birds but my mum has some land where she keeps goats/hens/ducks etc. Or I was considering raising painted quails and selling them to the petshop.(We are close friends with the owners of our local petshop and they are fab people who truly care for the animals and treat the animals as their own pets, they def. never sell puppies and only buy any live stock from small local breeders not huge commercial breeders). Does anyone have any experience with this? The r-com is fully automatic and all I will need to do is top up the water when the alarm beeps so I'm not worried about that, and I've bought a Novital brooder for the first couple of weeks then I'm going to use a free standing brooder in a large plastic box/cage.

So my main question is what birds to start with?
Quails
Turkeys
Geese
Ducks
Hens

I was thinking quails because they are so small so easier to accomodate for our first go at this I have done alot of research but would love to hear personal opinion based on experience!
