That sounds a little bit excessive to me.
No running, jumping or playing for 7-10 days and if crating is the only way to stop it, then yes crate. I held Ellie quite a bit after her spay instead of confining her to an area. Yes, they can walk more than just to potty but I don't want to go against what your vet is saying because they are just trying to protect her. If something happens and the stitches underneath get ruined, they will have to open her up again, so that's the concern.
