Usually if the dog jumps, you are holding the treat too high. Try holding the treat exactly at nose level while he's standing, and then raise it just enough that you can start moving it back towards his ears.

Also, you want to make sure he's not pulsating with energy during training sessions, so if you can, get him some exercise first.
