We litter trained Poppy from a puppy. Every time she had a little "accident" on the floor we were there behind her and would scoop her up and put her straight on to the litter tray. She was a little bemused about it to start with but she did start to associate that tray meant wee wee time. It did take a few weeks but our perseverence paid off and she started to use the tray herself.
I can't help with the poo eating issue as we've never encountered that problem.
