We put her out to pee before we go to bed about 10 or 11pm, and I get up again at 6am, so that would be 7-8hours she is holding.
We never notice when she comes in and out of our room, otherwise I would get up with her. (although I dont want to start that habit of having to let her out during the night).

You need to take her into your bedroom when it is time to go to bed if you want her to sleep with you. Pick her water up later in the evening and after her last time out for the night take her up to your bed. I will bet that once you are going to bed and she is wandering around downstairs along she is drinking and that is why she is peeing during the night.
