You're right about honey being a debatable issue. I only found 1 thing online about the dangers of honey but lots about it being good. I never asked a vet about it but don't use it on my dogs because of the possible danger. I keep Karo and Nutri-cal for puppies but not honey. These are both easy alternatives to honey. I'm not sure about popsicles. Has your baby got a sweet tooth?
