Play fighting can get pretty rough. We usually break it up by stomping on the floor also. We intervene if there is humping, if one dog gets pinned for more than a second or two, or if multiple dogs repeatedly gang up on one dog. Otherwise, high pitched yelps, blood, or if one of the dog tries to hide behind you for protection.
If a floor stomp doesn't work for you, try clapping your hands, a stern deep voice, or keep a spray bottle handy.
