I'm like you, I've had big breeds all my life, and was a vet tech for 7 yrs, so I was around a lot of different breeds.
I got Fiona when she was 3.5 months old, and she was the same, very skiddish around new people, and used to urinate when we would come around. After being with us for a little bit, she really came out of her shell.
Maybe he just needs some more time with you and really get to know himself as well as others.
he seems like he will adjust fine
You may want to really reward him with treats, even have new people lure him with food!
