This happens a lot - they smell the new food and are all WOO HOO!! And they pick it out. Well, if her poo is okay, then I'd say just keep doing what you're doing over the next week - I'd continue "pretending" you're transitioning so that she still might eat some of the old food. The main thing is to keep an eye on her poo though.
