Personally, I don't think potato is superior to corn. They are both starch you are right. The only reason I can think of is more dogs may be prone to allergy to corn than to potato. If your dog has no problem with corn, you may opt for corn rather than starch. My dog is allergic to oat for whatever reason...he itches like crazy if he eats anything that contain a lot of oat in it.
