When our doberman was jumping, the trainer told us that the best thing you can do (and get your guests to do) is to completely ignore them until they calm down. However that didn't work for our dog, I started having to be very forceful with her - getting angry and giving her a swat on the bum (no not hard - I'd never hurt my dogs) but if I didn't get her jumping under control she would take me out. It worked within a couple days once I started my "no nonsense" approch to her jumping.
