I don't mean to be gross, but a dark tarry stool that is from internal bleeding will often smell "bloody" and metallic. Does it? If so, I would not be listening to that vet who told you to watch him.

It could be a post-surgery hematoma that bled off a bit. Still, if it were me - I'd be heading to the vet since he's still considered post-surgical.
