Yeah, that's how you do them... I always sew my open holes with the machine though since it looks neater but you can do it by hand. I don't know how Chattiesmom does her toys (I got a toy with some YY I ordered at Christmas) and her edge was just sticking out and not inside the toy, I don't know if I'm making any sense. Her raw edge of her fabric was sticking out though and in that case, all you do is sew straight across the opening.
