The way I did the shoelace knots was tied them once (like when you're starting out on tying your shoe then I double tied which would make it a knot. I like it a lot better, I just feel it looks better but that may be just me. The balloon knot is the way you'd tie a balloon, not sure what video you're talking about. I pretty much just experiment with my stuff and do different things on my own until I find what works best for me.
