The ears will/may go up and down as they teeth. Also, if he has a lot of hair it can weigh them down. You can get a small mustache trimmer and use it to cut off the hair on the upper 1/3 of the ear. This is called tipping and you can find many threads with info on doing this. Start in the Grooming section.
You will get a lot of different opinions on what food is the best. Just do your research and make the best decision you can for you boy. Although our vets are wonderful, often times they simply don't know much more then us when it comes to nutrition. The time spent studying it during their schooling is very small compared to everything else they study. There are several threads on YT explaining how to safely switch foods. A good place to start is in the Health & Diet forum.
And if all else fails, simply start a thread again with more questions. There are always a lot of people here ready and willing to help.
